Open Faced Farm Breakfast Sandwich

I am a firm believer in starting the day off with a good breakfast.  During a typical weekday I usually have two berry smoothies, a cup of coffee, a mini bagel with cream cheese, and a glass of orange or apple juice.  On the weekends I will have pancakes one day and bacon and eggs the other.

On those surprise days when there is no school, I like to make breakfast sandwiches.  Today I had an "Open Faced Farm Breakfast Sandwich."   It begins with one piece of whole grain toast on the bottom followed by a nice fresh, green leaf of lettuce and a slice of colby cheese.  Then I add two thin sausage patties and two eggs over easy.  Lastly, a nice thick slice of tomato tops it all off.


What is in a name?  I use the phrase "Open Face" because there is no top, and you eat the sandwich with a fork--not your hands.  This is a common phrase.  However, the word "Farm" means there are both vegetables and meat on the sandwich.  Don't think about it too long--you won't enjoy this breakfast.
