Mexican for Breakfast

The next time you are hungry for Mexican flavors try this for breakfast:

Ingredients
Eggs
Milk
Red Onion
EVOO
Avocado
Cilantro
Lime
Garlic
Salt
Pepper

Guacamole 
1. Chop cilantro, dice avocado, chop red onion (sit half aside), and mince garlic. 
2. Mash ingredients together in a bowl with lime juice, salt, and pepper
3. Sit aside

Eggs
1. Heat two skillets with EVOO
2. Crack eggs into bowl
2. Add small amount of milk
3. Whisk
4. Add eggs to one skillet and remaining red onion to other
5. Mix scrambled eggs and cook onion

Serve
1. Plate egg and onion mixture
2. Top with a generous helping of guacamole
3. Pair with favorite chips and salsa
